A good brunch menu can include practically anything tied into breakfast for me. That's why I’ve selected 5 Sensational Brunch Recipes that are sure to be crowd pleasers.

These are great tasting recipes that are sure to please the fruit to nut to meat lover. Plus a slow cooker brunch recipe that can be cooking while you prepare for the big holiday dinner. It will be ready when you are.

Equipment & Supplies Needed

You will need: 10 inch skillet, spatula, serving plate

Optional: Can be made with or without meat.

Note: In place of butter, cooking spray can be used.

Prep time: 10 min
Cook time: 10 min
Ready in: 20 min
Yields: 2-3

Ingredients

  • cup picante sauce
  • 1 cup of cooked diced potatoes
  • 4 beaten eggs
  • cup of shredded cheddar cheese
  • 4 floured 8 inch warmed tortillas
  • 1 tablespoon of butter or margarine
  • ground pepper for taste
  • Optional: 4 strips of vegan or regular bacon (cooked and broken into bits)

Instructions

  1. Melt the butter in a skillet over medium heat. Add the potatoes and cook until slightly browned. Stir in the eggs and bacon. Cook until the eggs are done. Turn off heat and sprinkle the cheese over the top.
  2. Lay tortilla flat and spoon picante sauce over it smoothing an even layer. Spoon a portion of the egg mixture in the center of tortilla. Fold the tortilla in half covering the egg and potato filling.

Fruit Bruschetta for Brunch

You will need: Mixing bowl, baking sheet, spoon, knife, serving plate

Optional: You can substitute any sweet fresh fruit. Try cubed peaches, nectarines, pineapple, pears, pitted cherries, pears, blackberries, raspberries, mangos, kiwi or apples.

Prep time: 20 min
Cook time: 5 min
Ready in: 25 min
Yields: 4-6

Ingredients

  • 4 of any of the following: bagels -English Muffins or large wheat rolls
  • 2 tablespoons of orange juice
  • 1 tablespoon of fresh chopped mint leaves
  • 1 cup fresh chopped strawberries or blueberries
  • 1 cup fresh fruit (any)
  • cup vanilla yogurt (or any flavor you like)

Instructions

  1. If rolls need to be heated, prepare them according to the package directions ahead of time.
  2. 1. Cut bread item or rolls in half and place on baking sheet.
  3. 2. Lightly toast them under the broiler less than 5 minutes. (Ovens may vary.)
  4. 3. Remove from oven and drizzle honey on rolls.
  5. 4. In a small bowl mix orange juice, mint and remaining honey.
  6. 5. Add in 2 fruits of choice and stir lightly until fruit is coated.
  7. 6. Spoon over bagels or roll halves and serve right away.
  8. Note: Mixture can be made ahead of time and placed in refrigerator.

Scrumptious "Campbelled" Eggs

You will need: skillet, spatula, serving plate, mixing bowl, fork or whisk.

Note: You can use any of the Campbell's condensed cream soups. Try this recipe with condensed cream of celery, mushroom, broccoli, or asparagus soup.

Cook Time

Prep Time: 10 minutes

Total Time: 15-18 minutes

Serves: 4 pepple

Ingredients

  • 8 eggs
  • 2 tablespoons butter or margarine
  • Ground black pepper
  • Fresh chopped parsley
  • 1 regular size can of any Campbell's condensed cream soups
  • Optional: Add diced onions or peppers.

Instructions

  1. 1. Combine eggs, pepper and soup in a bowl and beat with a whisk or fork.
  2. 2. Melt butter in a 10 inch skillet over low heat. If you don't want to use butter, spray pan with cooking spray.
  3. 3. Add egg mixture and cook until eggs are done.
  4. 4. Flip cooked egg onto a serving dish and garnish with parsley.
  5. NOTE: This would go nicely with the fruit brunch bruschetta recipe above.

Pecan Pie French Toast - A Favorite of Mine! Taste better the next day, even cold.

Preheat over 350 degrees

You will need: baking sheet, 1-quart sauce pan, mixing bowl, whisk, fork, spoon, serving plate

Tip: Use a thicker bottom sauce pan when cooking a sugar mixture. The thicker the bottom the less likely it is to burn.

Cook Time

Prep Time: 15 minutes

Total Time: approx. 40 minutes

Serves: 8

Ingredients

  • 1 stick butter (1/2 cup)
  • cup packed brown sugar
  • cup granulated sugar (optional)
  • cup chopped pecans
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 loaf (16 slices) cinnamon and raisin swirl bread
  • 1 cup of milk
  • Optional: favorite syrup or honey
  • fresh berries and whipped topping
  • Confectioners' sugar

Instructions

  1. Step A
  2. 1. In a one quart saucepan, on medium heat bring butter and brown sugar to a boil.
  3. 2. Remove from heat and stir in pecans.
  4. 3. Grease a baking sheet with butter and place bread on baking sheet.
  5. 4. Bake for 5 minutes or until bread is slightly toasted.
  6. Step B
  7. 1. In a mixing bowl, beat eggs, sugar, vanilla and milk with a whisk or fork. (I don't add sugar.)
  8. 2. Dip 8 warm bread slices in egg mixture and place on baking sheet.
  9. 3. Spoon about one tablespoon of pecan mixture on each slice of bread.
  10. 4. Dip remaining 8 slices in egg mixture and put on top of the pecan sliced on bread on the baking sheet to make sandwiches.
  11. Bake for 20 minutes or until the sandwiches are golden brown.
  12. Sprinkle with confectioners' sugar. Cut each sandwich into quarters and serve.
  13. Serving Suggestions: Serve warm with syrup, fresh berries and whipped topping

What is a Strata or stratta Recipe?

It is a layered casserole dish in the America's. We know these dishes mainly as brunch meals such as a quiche or frittata. They are a mixture of bread, cheese and eggs, but can also include vegetables or meat.

Making a strata recipe requires that you layer the bread and then filling by repeating the pattern. It then has to have a time period of sitting, which can take anywhere from an hour to overnight before it is baked and served warm.

Cheese Strata Recipe ~ Super Easy Time Saver - Prepare this ahead of time and bake it later.

A great dish to prepare ahead of time or the night before the big event.

Preheat oven 350 degrees.

You will need: 2 quart shallow baking dish with cover, whisk, fork, mixing bowl, foil or plastic wrap, cooking spray

Prep time: 15 min
Cook time: 4 hours 45 min
Ready in: 5 hours
Yields: 6

Ingredients

  • 6 slices of bread cubed
  • 1 can 98% fat free Campbell's condensed cream of cheddar soup
  • 1 cup milk
  • 4 eggs
  • 6 ounces of shredded Swiss cheese
  • ground black pepper

Instructions

  1. 1. In a small mixing bowl, whisk eggs, milk soup and pepper. Stir in shredded cheese.
  2. 2. Grease a 2 quart baking dish.
  3. 3. Place cubed bread in pan. Pour egg mixture over bread to coat evenly.
  4. 4. Cover and refrigerate for four hours or even overnight.
  5. Heat oven 350 degrees.
  6. Uncover baking dish and bake for 45 minutes or until knife inserted in center comes out clean.

Western Pepper & Eggs Strata - Slow Cooker Recipe

A great recipe to have cooking for brunch, as you prepare for a large dinner for the evening.

You'll need: a pressure cooker, vegetable cooking spray, mixing bowl, whisk, fork, spoon, serving bowl

Prep time: 15 min
Cook time: 6 hours 45 min
Ready in: 7 hours
Yields: 12

Ingredients

  • 8 slices of bread cubed (they can be seasoned)
  • 2 cups of milk
  • 8 eggs
  • 3 cups frozen (thawed) diced potatoes or hash browns
  • 1 cup of chopped onion
  • 1 cup of chopped green pepper
  • 8 ounces of shredded cheddar cheese
  • 1 can Campbell's 98% fat free cream of mushroom condensed soup
  • Ground black pepper
  • Optional: 1 pound maple flavored ham steak diced

Instructions

  1. Step A
  2. 1. In a mixing bowl, combine bread cubes, potatoes, peppers, onions, cheese, (optional) meat and black pepper.
  3. 2. Spray the inside of the slow cooker with vegetable cooking spray.
  4. 3. Pour mixture in slow cooker.
  5. Step B
  6. 1. In the mixing bowl, now combine eggs and soup using a whisk or fork.
  7. 2. Pour evenly over the bread mixture pressing the bread to soak up the liquid. Make sure bread is coated.
  8. 3. Cover pressure cooker and cook on low for 7-8 hours until eggs are set. Serve warm.
  9. Serving suggestions: Instead of cheddar cheese, try this with pepper jack or Monterey Jack cheese.
